Naughty Kitty’s Linzer Cookies

Just when you think you can count on Naughty Kitty for a good ole’ cyber sex  post I throw you a zinger! Not only that but a sentimental story and a RECIPE!!!! I know….WTF?!?!?

Well I figure I have earned the right to change things up a bit given the fact that I had several sexy posts this week.

Okay, sentimental story first…Even though I have several older sisters there is a fairly big age difference. They are over a decade older
than me. Did I mention that they are OLD! Like well into their 50’s!!! Okay, that’s not nice but anyway growing up I was sort of like an only child and spent a lot of time with my Mom. She used to take me shopping which she loved and I HATED. In an effort to reward me buy me off shut me up she would give me little treats. I she used to bring me to this little bakery in our hometown. She would buy me these Linzer cookies which were buttery with delicious jelly in the middle and dusted with powdered sugar. My God they were delicious. That was my special treat. She bought me one individually wrapped cookie every so often on one of her shopping trips…if I was good.

The memory of that cookie carried with me into adult hood and I never even thought to try to make them…actually I did but the recipes I found all had cinnamon in them and I just don’t remember the cookie having cinnamon in it.

One day I was visiting my sister and I was looking through her cookbooks. I think she brought my attention to this recipe so I took a copy. I made them one Thanksgiving and a tradition was born. Turns out that my mother adores them and they remind her of that cookie from my childhood as well. My children over time have also come to love these cookies.

I know you all think I hate my kids but I will let you in on a little secret…nothing is more satisfying to me then pleasing my kids. I very rarely cook or bake but when I make something that my kids enjoy I relish in the compliments. I get all warm and fuzzy inside when they devour my pumpkin bread or give a big “yyyeeeessssss” when they see that I am making these cookies.

I sort of feel like the Grinch Who Stole Christmas. My heart sort of grows…if I were to have a heart that is.

So when I saw this cookie exchange I decided to post this.

The dough is easy to make but a fucking pain in the ass to work with so BE CAREFUL!! That’s one of the reasons that I only make it once a year. The other reason is that I eat them all and they are far from low
calorie.

½ lb. butter

2/3 C. Sugar

1 -1/3 C ground pecans

½ t. vanilla

2 C Flour

Cream butter and sugar. Add vanilla, nuts and flour gradually. Refrigerate 1-2 hours. Roll 1/8” thick on floured board (I use plastic wrap to keep the dough buttery). Cut out 2” shapes. Cut ½” center in ½ of the cookies. Bake 375 degrees 10-12 minutes. Cool completely. Dust cut outs with powdered sugar. Spread seedless raspberry jam on solid cookies and sandwich together with cut out half on top.

I know it is hard to believe but I USED to be a good girl ;)

Ryan these are amazing! The dough is a bitch to deal with but once you get the hang of it they are well worth it.

Maybe you should add a fondant icing just to add to the bitchiness! :) The powdered sugar is the only easy part.

Great story! And thanks for the recipe, I love linzer cookies but have yet to actually make them myself. Now I'll have to give them a try. Hopefully mine turn out as well as my granny's do, lol.
